Plant-Based “Tuna” Salad Sandwich

If you love chickpeas (or garbanzo beans, same thing!) you’re going to love my Plant-Based “Tuna” Salad Sandwich.

Chickpeas are rich in fiber, B vitamins and so versatile that when coarsely mashed, chickpeas make a great substitute for chicken or turkey. So, the next time you’re in the mood for a tuna sandwich but want to make it plant-based give this Plant-Based “Tuna” Salad Sandwich a try! 

Plant-Based “Tuna” Salad Sandwich

Ingredients: 

1 (15 oz) can of chickpeas, drained and rinsed

1/2 cup carrots, chopped 

1/2 cup celery, chopped

¼ cup red onion, chopped

2 tablespoon vegan mayo 

1/2 teaspoon salt

1/4 teaspoon garlic powder

1/4 teaspoon ground black pepper

¼ cup chopped cilantro (optional)

To serve:

Sandwich bread

Sliced avocado 

Arugula (or leafy greens of choice)

Tomato

 Instructions:

Using a fork, mash the chickpeas until most are smashed, but some chickpeas are still left. Add the rest of the ingredients and mix well. Taste for seasoning adjustment. Build your sandwich and enjoy

Sándwich de “atún” Vegano

 
 

Si te encantan los garbanzos, te va a encantar mi sándwich de “atún” vegano.

Los garbanzos son ricos en fibra, vitaminas B y tan versátiles que cuando se machacan en puré, los garbanzos son un excelente sustituto del pollo o el pavo. Por lo tanto, la próxima vez que esté de humor para un sándwich de atún pero quiera hacerlo vegano, prueba este sándwich que seguro te encantara. 

Ingredientes:

1 lata (15 oz) de garbanzos, escurridos y enjuagados

1/2 taza de zanahorias picadas

1/2 taza de apio picado

¼ de taza de cebolla morada picada

2 cucharadas de mayonesa vegana

1/2 cucharadita de sal

1/4 de cucharadita de ajo en polvo

1/4 cucharadita de pimienta negra molida

¼ de taza de cilantro picado (opcional)

Para Servir:

Pan de sándwich

Aguacate en rodajas

Rúcula (o verduras de hoja verde de su elección)

Tomate

 Instrucciones:

Con un tenedor, tritura los garbanzos hasta que la mayoría se rompa, pero aún quedan algunos garbanzos. Añadir el resto de los ingredientes y mezclar bien. Ajuste los condimentos si desas. Construye el sándwich y disfruta.
