Yuca con Mojo (Yuca with Garlic Sauce)

Yuca Con Mojo Recipe

Yuca is another delicious root veggie you can add to your meals for variety and extra nutrients! It can be boiled, fried and baked and enjoyed as a side dish or snack. Yuca con Mojo (or Yuca with Garlic Sauce) is a popular Latin dish that pairs boiled yuca with the bright flavors of citrus and the pungent taste of onions and garlic. The recipe is easy to make and so delicious but before I share my version of Yuca Con Mojo, let’s highlight the important health benefits of yuca!

 Health Benefits of Yuca

Ingredients 

1 (24oz bag) frozen yuca

1 cup olive oil 

1 yellow (or red) onion sliced 

3-4 cloves garlic minced 

2 bay leaves 

12 black peppercorns 

Salt to taste 

Juice of 1 lime 

Fresh cilantro for garnish (optional) 

Instructions: 

  1. Add water and a tsp of salt to a large pot and bring to a boil. Add the frozen yuca wedges and let the water come to a boil again. Bring to a simmer, cover the pot and cook for 20min or until the yuca is tender. Drain the yuca and place in a serving dish and set aside. 
  2. Coat the bottom of a large sauce pan with some of the olive oil and heat over medium heat. Add the onion and garlic and sauté until soft. 
  3. Slowly pour in the rest of the olive oil and mix. Add the bay leaves, black peppercorns and salt and combine. Reduce the heat to simmer and let cook 5-7min until the flavors comes together. 
  4. Pour the mixture over the cooked yuca, add the lime juice and combine. Add more salt if necessary and garnish with fresh cilantro (optional).

¡La yuca es un tubérculo delicioso que puedes agregar a tus comidas para obtener mas variedad y nutrientes adicionales! La yuca se puede hervir, freír, hornear y disfrutar como merienda o plato principal. Yuca con Mojo (o Yuca en salsa de ajo) es un plato popular en Latinoamerica que combina la yuca hervida con los sabores brillantes de los cítricos y el sabor picante de las cebollas y el ajo. La receta es rica y super facil de hacer pero antes de compartir mi versión de Yuca Con Mojo, ¡destaquemos los importantes beneficios para la salud de la yuca!

 

Beneficios para la salud de la yuca

  1. Apoya la función inmunológica

  3. Tiene un índice glucémico bajo

Ingredientes

1 (bolsa de 24 oz) yuca congelada

1 taza de aceite de oliva

1 cebolla amarilla (o roja) en rodajas

3-4 dientes de ajo picados

2 hojas de laurel

12 granos de pimienta negra

Sal al gusto

Zumo de 1 lima

Cilantro fresco para decorar (opcional)

Instrucciones:

  1. Agregue agua y una cucharadita de sal a una olla grande y deje hervir. Agrega las rodajas de yuca congeladas y deja que el agua vuelva a hervir. Llevar a fuego lento, tapar la olla y cocinar por 20min o hasta que la yuca esté tierna. Escurre la yuca y colócala en una fuente para servir y reserva.
  2. Cubra el fondo de una sarten grande con un poco de aceite de oliva y caliente a fuego medio. Agrega la cebolla y el ajo y sofríe hasta que estén suaves.
  3. Vierta lentamente el resto del aceite de oliva y mezcle. Agregue las hojas de laurel, los granos de pimienta negra y la sal y combine. Reduzca el fuego a fuego lento y deje cocinar 5-7min hasta que los sabores se unan.
  4. Vierta la mezcla sobre la yuca cocida, agregue el jugo de lima y combine. Agregue más sal si es necesario y decore con cilantro fresco (opcional).
