Green Plantain Fritters

Cooked green plantains are delicious and nutritious. They are similar to a potato, calorie-wise, but have more vitamins and minerals. They’re a good source of fiber, vitamins A, C, and B-6. Most of us were taught to eat the inside of the plantain (the starchy yellow part) tossing out the peel. But what if I told you that the peel of a green plantain has powerful healing properties too? It’s high in fiber and vitamin A, which promotes wound healing, speeds up cell regeneration and has skin-softening effects.

Make these fritters using whole plantains and enjoy the health benefits this superfood has to offer.

Please note: Eating plantain peels can expose you to contaminants or pesticides, so it’s important to buy organic when possible or scrub them carefully to remove harmful toxins.

Green Plantain Fritters

Ingredients

2 medium-sized organic, unpeeled green plantains, washed with ends cut off

½ tsp garlic powder

½ tsp salt

Ghee for frying

Instructions: Over a large mixing bowl shred the plantains. Add garlic powder and salt and combine. Heat a pan over medium heat. Once hot, melt 2 tbsp of ghee. Using your hands, form 2×2 inch patties (about the size of the palm of your hand). Fry 2-3min on each side or until the edges are golden brown and crispy. Remove the patties from the pan and place on a plate lined with a paper towel to help absorb any excess ghee. Serve with your favorite dipping sauce and enjoy.

Ingredientes

2 plátanos verdes de tamaño mediano, orgánicos, sin pelar, lavados con los extremos cortados

½ cucharadita de ajo en polvo

½ cucharadita de sal

Ghee para freír

Instrucciones: En un bowl grande, raye los plátanos. Agregue ajo en polvo y sal y combine. Pon un sartén a calentar a fuego medio. Una vez caliente, derrita 2 cucharadas de ghee. Con las manos, forme frituras de 2×2 pulgadas (el tamaño de la palma de su mano). Freír 2-3min por cada lado o hasta que las orillas estén dorados y crujientes. Retire las frituras de la sartén y colóquelas en un plato forrado con papel toalla para ayudar a absorber la grasa. Sirvelos con tu salsa favorita y disfruta.
