Calabaza squash is a tropical variety of squash and a member of the Cucurbitaceae family along with pumpkins and gourds. Also known as West Indian pumpkin, Auyama, Calabasa, and Green pumpkin, Calabaza squash is grown in tropical regions throughout Latin America and known for its creamy texture and mild flavor.

Nutritional Tip: Calabaza squash is rich in fiber and contains vitamins A, B, C, thiamine, riboflavin, and beta-carotene.

Here’s a delicious Dairy-Free Cream of Calabaza Squash soup recipe made with fresh and simple ingredients.

 

Dairy-Free Calabaza Squash Soup

Ingredients

2lbs (about 7 cups) of Calabaza, washed and cut into cubs (keep the peel)

 ½ yellow onion, chopped

1 green pepper, washed and seeds removed

2 garlic cloves, peed

5 cups homemade vegetable broth (water works too)

½ cup fresh cilantro, chopped       

½ cup fresh parsley, chopped

Salt and pepper to taste

Toppings (optional)

Toasted pumpkin seeds

Fresh chopped cilantro

Red pepper flakes

Instructions: Place a large sauce pan over medium heat. Add the calabaza, onion, green pepper, garlic and vegetable broth and bring to a boil then reduce to medium heat. Cook 20-30min or until the vegetables are tender.  Once tender, add the cilantro and parsley and combine. Turn off the heat and using a hand blender, blend the vegetables until smooth and creamy. Add salt and pepper to taste. Serve with toppings of choice.

La calabaza tropical es otra variedad de calabaza y un miembro de la familia Cucurbitaceae. También conocida como calabaza de las Indias Occidentales, Auyama y calabaza verde, la calabaza tropical se cultiva en regiones tropicales de América Latina y es conocida por su textura cremosa y sabor suave.

Consejo nutricional: la calabaza tropical es rica en fibra y contiene vitaminas A, B, C, tiamina, riboflavina y betacaroteno.

Aquí les dejo la receta para hacer una deliciosa Crema de Calabaza hecha con ingredientes simples y frescos.

 

Crema de Calabaza

Ingredientes

2 libras (aproximadamente 7 tazas) de Calabaza organica, lavada y cortada (mantenga la cáscara)

½ cebolla amarilla, picada

1 pimiento verde, lavado y sin semillas

2 dientes de ajo, pelados

5 tazas de caldo de verduras (el agua también funciona o caldo de pollo)

½ taza de cilantro fresco, picado

½ taza de perejil fresco, picado

Para servir

Semillas de Calabaza tostatas

Cilantro fresco picado

Pipienta roja

Instrucciones: Coloque una cacerola grande a fuego medio. Agrega la calabaza, la cebolla, el pimiento verde, el ajo y el caldo de verduras y deja que hierva y luego reduce a fuego medio. Cocine 20-30min o hasta que las verduras estén tiernas. Una vez tierno, agregue el cilantro y el perejil y combine. Apague el fuego y con una batidora de mano, licúe las verduras hasta que quede suave y cremoso. Añadir sal y pimienta a gusto. Sirva y con semillas de calabaza, cilantro y pipienta roja.
