Cauliflower Bolognese

Cauliflower Bolognese

A plant-based diet consists of food that is whole, unprocessed, and sourced from plants. Adding just a few plant-based meals to your menu every week can be great for your health. The benefits of implementing a more plant-based diet are backed by some impressive science. Eating more fruits and veggies is linked with heart health, healthy weight loss, enhanced cognitive function, and much more. Here’s a delicious plant-based recipe for Cauliflower Bolognese. I promise you won’t miss the meat.

Ingredients

1 package dry pasta of choice

2 tbsps olive oil

½ yellow onion, chopped

3 cloves garlic (minced)

1 (16 oz bag) cauliflower rice

8 oz brown mushrooms (sliced)

1 (24 oz) jar marinara sauce (I like Rao’s Homemade)

Salt and red pepper flakes to taste (optional)

Toppings

Grated Dairy-Free parmesan cheese (I like Violife Foods)

Chopped fresh parsley

Instructions: Prepare pasta per package instructions and set aside. Place a large pot over medium heat and heat the olive oil. Add the onions and garlic and sauté until fragrant. Add the cauliflower and mushrooms and combine. Cook until the cauliflower is soft, approx. 5min. Add the marinara sauce and season with salt and red pepper flakes. Combine well and cover the Bolognese with a tight lid allowing all the flavors to come together, approx. 10min. Divide the cooked pasta into separate bowls and add a nice helping of the Bolognese over the pasta. Top with grated dairy-free parmesan cheese and chopped fresh parsley. Enjoy!

Boloñesa de Coliflor


Una dieta basada en plantas consiste en alimentos sin procesar y de origen vegetal. Agregar comidas a base de plantas puede ser excelente para su salud. Comer más frutas y verduras está relacionado con la salud del corazón, una pérdida de peso saludable, una función cognitiva mejorada y mucho más.  Aquí les tengo una deliciosa receta para hacer Salsa Boloñesa de Coliflor hecha a base de plantas que te va a encantar!

Ingredientes

1 paquete de pasta seca a elección

2 cucharadas de aceite de oliva

½ cebolla amarilla picada

3 dientes de ajo (picados)

1 (bolsa de 16 oz) de arroz de coliflor

8 oz de champiñones marrones (en rodajas)

1 frasco (24 oz) de salsa marinara (me gusta Rao’s Homemade)

Sal y pimienta rojo a gusto (opcional)

Para servir

Queso parmesano rallado sin lácteos (me gusta Violife Foods)

Perejil fresco picado

Instrucciones: Prepare la pasta según las instrucciones del paquete y reserve. Coloca una olla grande a fuego medio y calienta el aceite de oliva. Agregue las cebollas y el ajo y saltee hasta que estén fragantes. Agrega la coliflor y los champiñones y combina. Cocine hasta que la coliflor esté blanda, aprox. 5 minutos. Agrega la salsa marinara y sazona con sal y pimienta roja. Combine bien y cubra la boloñesa con una tapa permitiendo que todos los sabores se unan, aprox. 10 minutos. Divida la pasta cocida en tazones y agregue la boloñesa sobre la pasta. Cubra con queso parmesano rallado sin lácteos y perejil fresco picado.
