Healthy Pasta “Alfredo”

I’m surprised there isn’t a cauliflower shortage by now but who’s complaining, right? These days we can FLIP just about anything by using cauliflower; pizza crusts, taco shells, mashed potato, rice! Cauliflower is low in calories and easy to work with. A totally winner in my book.

The other day, I came across a recipe for cauliflower fettuccine “Alfredo” and thought “there is no way this can taste good” but kept reading and looking through similar recipes. Most recipes called for butter and cheese, lots of it. So why not have the real thing? I took the easiest recipe I found for cauliflower “Alfredo” and flipped it to my liking. Well, whatta you know, it’s FLIPPING (get it, lol) delicious. Here is what I did.


Ingredients

1 package gluten-free brown rice pasta

1 head of cauliflower, stemmed and cut into florets

1 teaspoon ghee

1-2 small cloves of garlic, minced

1 cup water

1/2 cup Nutritional Yeast

salt and pepper to taste

 flat-leaf parsley, chopped (optional)


Instructions

Cook pasta according to package instructions. Once cooked, strain, rinse and set aside. You can drizzle a little olive oil to prevent the pasta from sticking together.  Heat the ghee in a pan over medium heat. Add garlic and cook for a few min or until tender and fragrant (careful not to let it burn). Add water and cauliflower and bring to a boil. Once boiling, cover the pan and let cook, 8-10min or until cauliflower is tender. Transfer the contents of the pan into a food processor. Add Nutritional Yeast and process until smooth or until texture is similar to a traditional cream sauce (add more water if necessary). Transfer sauce and cooked pasta to a large mixing bowl and combine. Season with salt and pepper. Serve warm and garnish with a nice helping of fresh parsley. Enjoy!

It was so good we took the leftovers to Lake George the next day and had it for lunch.

If you follow us on Instagram and Facebook you know that we were just in Lake George, NY. Every year we take the trip upstate with Joe’s family. It’s a family tradition they started a few years ago. The kids have a great time and so do the adults. Unfortunately, due to unforeseen circumstances, we didn’t stay at the lake for very long and headed back home to be with our loved ones during a very difficult time.

We look forward to next year when the whole family can be together again.
