Summer squashes are high in vitamins A, B6, and C, folate, magnesium, and fiber! They are a powerhouse of nutrition and flavor. Summer squashes are available now and can be made into easy recipes the entire family can enjoy. Here’s a simple recipe for a Summer Squash Sauté made with fresh and simple ingredients. Enjoy!

Summer Squash Sauté

Ingredients:

1 zucchini
1 yellow summer squash
1 cup cherry tomatoes
1 red bell pepper

1 garlic clove, minced
2 tablespoons olive oil
¼ teaspoon sea salt
½ teaspoon dried oregano

Instructions:

  1. Wash squashes and cut into ½-inch cubes.
  2. Wash cherry tomatoes and cut in half.
  3. Wash pepper, take out seeds and cut into ½-inch pieces.
  4. Heat oil in a large sauté pan. Add the red pepper and garlic and cook for three minutes.
  5. Add the squashes, cherry tomatoes, salt and oregano and sauté for another three or four minutes, stirring frequently.
  6. When the zucchini turns bright green, turn off heat and serve.

¡Las calabazas de verano son ricas en vitaminas A, B6 y C, ácido fólico, magnesio y fibra! Son una fuente inagotable de nutrición y sabor. Las calabazas de verano están disponibles ahora y pueden convertirse en recetas fáciles que toda la familia puede disfrutar. Aquí les dejo una receta simple para un Salteado de Calabaza de Verano hecho con ingredientes frescos y simples. 

Ingredientes:

1 calabacín

1 calabaza amarilla de verano

1 taza de tomates cherry

1 pimiento rojo

1 diente de ajo picado

2 cucharadas de aceite de oliva

¼ cucharadita de sal marina

½ cucharadita de orégano seco

Instrucciones:

  1. Lave las calabazas y córtelas en cubos de ½ pulgada.
  2. Lave los tomates cherry y córtelos por la mitad.
  3. Lave la pimienta, saque las semillas y córtelas en trozos de ½ pulgada.
  4. Caliente el aceite en una sartén grande para saltear. Agregue el pimiento rojo y el ajo y cocine por tres minutos.
  5. Agregue las calabazas, los tomates cherry, la sal y el orégano y saltee durante otros tres o cuatro minutos, revolviendo con frecuencia.
  6. Cuando el calabacín se ponga verde brillante, apague el fuego y sirva.
