White Bean Soup

A hearty bean soup does not always mean hours behind the stove. Combine canned beans with fresh veggies to cut down on cooking time! Here’s a simple White Bean Soup recipe that’s ready in under 30min.

Nutritional Tip: Upgrade this dish by adding turmeric and black pepper. Why? Turmeric contains a powerful phytochemical called curcumin. Black pepper contains piperine, when combined, curcumin and piperine have a greater effect on inflammation, digestion, reducing pain and fighting cancer.

Ingredients

 

2 tablespoons extra virgin olive oil

2 garlic cloves, peeled and minced

1/2 yellow onion, chopped

1 tablespoon Herbs de Provence

1 carrot, chopped

1 celery stalk, chopped

4 cups of water or vegetable broth

1 can (150z) organic Cannellini beans, washed and rinsed

½ tsp ground turmeric

1/8 tsp ground black pepper

Redmond Real Salt to taste

1 cup fresh spinach, chopped

1/ 4 cup fresh cilantro, chopped

1/ 4 cup fresh parsley, chopped

Instructions

  1. Place a pot over medium heat. Heat the extra virgin olive oil.
  2. Add the garlic, onions and Herbs de Provence and sauté until the onions are translucent and the mixture is fragrant. (add a little water to avoid browning)
  3. Add carrot, celery and sauté, 3-4 minutes.
  4. Add 4 cups of water or vegetable broth and cover with a lid, bring soup to a light boil, then reduce heat to medium-low.
  5. Add the beans, turmeric, pepper and salt and combine.
  6. Again, cover the soup with a lid and bring to a light boil, then reduce heat to medium-low and let simmer until the carrots are tender, about 5-7min.
  7. Turn off the heat and add the spinach, cilantro and parsley and combine. Adjust seasoning if necessary.
  8. Remove from heat, serve and enjoy.

Sopa de Frijoles Blancos

La sopa de frijoles no tienen que tardar horas en cocinar. ¡Combine frijoles enlatados con verduras frescas para reducir el tiempo el la cocina! Aquí les dejo una receta simple de Sopa de Frijoles Blancos que está lista en menos de 30 minutos.

Consejo nutricional: Mejore este plato añadiendo turmeric y pimienta negra. El turmeric contiene un potente fitoquímico llamado curcumina. La pimienta negra contiene piperina, cuando se combinan los dos ingredientes, la curcumina y la piperina tienen un mayor efecto sobre la inflamación, la digestión, la reducción del dolor y la lucha contra el cáncer.

Ingredientes

 

2 cucharadas de aceite de oliva extra virgen

2 dientes de ajo, pelados y picados

1/2 cebolla amarilla picada

1 cucharada de Hierbas de Provenza

1 zanahoria picada

1 tallo de apio picado

4 tazas de agua o caldo de verduras

1 lata (150z) de frijoles Cannellini orgánicos, enjuagados

½ cucharadita de turmeric molido

1/8 cucharadita de pimienta negra molida

Sal al gusto

1 taza de espinaca fresca, picada

1/4 taza de cilantro fresco, picado

1/4 taza de perejil fresco, picado

Instrucciones

  1. Coloque una olla a fuego medio. Calentar el aceite de oliva.
  2. Agregue el ajo, la cebolla y las Hierbas de Provenza y sofríe hasta que las cebollas estén transparentes y la mezcla esté fragante. (puedes agregar un poco de agua para evitar que se dore)
  3. Agregue la zanahoria, el apio y sofríe, 3-4 minutos.
  4. Agregue 4 tazas de agua o caldo de verduras y cubra con una tapa, lleve la sopa a ebullición leve y luego reduzca el fuego a medio-bajo.
  5. Agregue los frijoles, el turmeric, la pimienta y la sal y combine.
  6. Vuelva a cubrir la sopa con la tapa y deje hervir ligeramente, luego reduzca el fuego a medio-bajo y deje hervir a fuego lento hasta que las zanahorias estén tiernas, aproximadamente 5-7min.
  7. Apague el fuego y agregue las espinacas, el cilantro y el perejil y combine. Ajuste la sal si es necesario.
  8. Retirar del fuego y sirva.
