Mushroom Stuffed Sweet Potato

Edible mushrooms contain protein and fiber. They also contain B vitamins as well as a powerful antioxidant called selenium, which helps to support the immune system and prevent damage to cells and tissues.

Sweet potatoes are rich in fiber, vitamins, and minerals. They’re also high in antioxidants that protect your body from free radical damage and chronic disease.

Here’s a recipe that incorporates mushrooms and sweet potatoes and is easy to make! 

 

Mushroom Stuffed Sweet Potato

 

Ingredients

3 medium-size sweet potatoes, roasted 

1 8oz package white mushrooms (stems removed and chopped) 

2 garlic cloves, minced 

1 cup of marinara sauce (add more to adjust consistency) 

1 tbsp olive oil 

Salt and pepper to taste 

Fresh cilantro, chopped (optional) 

Instructions

Heat the olive oil in a pan over medium heat. Once hot add the garlic and sauté. Add the mushrooms and toss to fully coat in olive oil and garlic. Add the marinara sauce and combine. Cover the pan and let simmer 5-7min or until the mushrooms are tender. Once the mushrooms are tender remove from heat and set them aside. Season with salt and pepper. Cut an opening in each sweet potato and stuff them with a nice helping of mushrooms. Top with chopped cilantro (optional). Serve as a side or enjoy on its own.

1 taza de salsa marinara (agregue más para ajustar la consistencia)

1 cucharada de aceite de oliva

Sal y pimienta para probar

Cilantro fresco, picado (opcional)

Instrucciones

Calienta el aceite de oliva en una sartén a fuego medio. Una vez caliente agregue el ajo y saltee. Agregue los champiñones y revuelva para cubrir completamente con aceite de oliva y ajo. Agregue la salsa marinara y combine. Cubra el sartén y deje hervir a fuego lento durante 5-7 minutos o hasta que los champiñones estén tiernos. Una vez que los champiñones estén tiernos, retírelos del fuego y déjelos a un lado. Condimentar con sal y pimienta. Corta una abertura en cada batata y rellena con una buena porción de champiñones. Cubra con cilantro picado (opcional). Sirve como acompañamiento o disfruta solo.
